Our family likes to take small weekend camping trips, especially during the school year.  We pack in all of our food for the weekend and cook everything on our portable marine grill.  We have some simple ways to keep the food from being too monotonous or dull, as the kids have complained in the past.

These are some of the simple thoughts that we have incorporated into our weekend menus.

First, we simply take the refrigerated slice and bake cookie rolls that can be found in any grocer.  We use our BBQ griddle pan and place about a tablespoon of dough about one inch apart.  When the thermometer on the BBQ reaches 350 degrees  we place the pan in and shut the lid.  You want to keep the flames on as low as possible to sustain the temp.  The cookies should be ready in about 15 minutes, but monitor and do not let burn. The kids like the chocolate chip cookies when we go camping – they want to make them, eat them, and do not even mind cleaning up afterwards.

Second, we bring along all the fixings for individual pizzas.  We already have the dough, the sauce, and all the toppings prepared.  We can do about two individual size pizzas at a time with the griddle pan and the grill.  Again, we let the grill heat up to about 350 degrees and cook the pizzas until piping hot and golden brown.

Third, we sometimes like some pancakes while out on our weekend excursions.  Now, these are the simplest – just keep the grill on low but again, use the griddle pan and keep an eye on the pancakes.  Be sure to change things up with blueberries, chocolate chips, nuts,  and any other pancake items you desire.

Fourth,  we like to use a grill wok for some incredibly tasty stir fry.  We prefer a vegetarian medley of assorted vegetables.  You just need to be sure to bring along some teriyaki sauce or whatever kind of stir fry seasoning, I also must have some roasted sesame seeds but they are optional, of course.  Again, start out with low heat and stir vegetables often.

Lastly, for now, we always keep a campfire soup on hand.  It is quick and simple to heat up and sometimes we just want a hearty warm liquid to go along with whatever else we are  having.  We like to keep the soup recipe simple by just bringing along a few cans of vegetables like tomatoes, corn, peas, carrots, beans,  and some seasonings.  We also make it a small heartier with pasta or rice.  We just open the cans, add water, and heat.

Make the following foods a part of your regular diet and experiment with new flavorful recipes to add some variety to you plate!

1) Berries

Berries are loaded with health protecting antioxidants. Blueberries top the nutrition list but are closely followed by cranberries, blackberries, raspberries and strawberries. All of them are rich in an antioxidant that has been shown to neutralize free radicals which may help ward off illnesses such as cancer and heat disease.

Berries of all kinds are tasty in a smoothie or mixed with cottage cheese, added to oatmeal, atop a salad or on toast with a small bit of almond butter. 3) Dark leafy greens

Popeye wasn’t kidding! Spinach, kale, bok choy, Swiss chard and other dark lettuces are packed with a plethora of nutrients. Vitamins, minerals, beta-carotene, folate, iron, magnesium, phytochemicals and antioxidants abound in these versatile veggies.

Toss together a fresh crisp salad and top it with grilled salmon or tuna for a highly nutritious meal. Sautee dark leafy greens with olive oil and garlic for a tasty side dish. Include a variety of these greens in omelets, sandwiches, stir frys, frittatas, pasta or quiche or simply serve with balsamic vinaigrette dressing as an accompaniment to any of the above.

4) Whole grains

When I was a kid, I was told “Eat your oatmeal, it’s excellent for you. It’ll grow hair on your chest”. Thankfully since I was a small girl, it did not but it may have lowered my blood cholesterol levels. Whole grains are high in soluble fiber, contain folic acid, selenium, B vitamins and support heart health, weight control and reduce the risk of diabetes. The high fiber content helps keep you regular and promotes digestive health.

Choose a variety of whole grains and include 2 to 3 servings a day of brown rice, whole grain pasta, breads, cereals, quinoa or barley. The options for preparation of these heart healthy foods are limitless and they can easily be paired with fruits, vegetables, lean proteins and low stout dairy products.

5) Beans and Legumes

These small morsels of inexpensive protein pack a wallop of nutritional advantages. Beans and legumes are dense with phytochemicals, folic acid, fiber, iron, magnesium and some calcium. Adding these to your menu plot can help reduce the risk of certain cancers, lower blood cholesterol and triglyceride levels and keep blood sugar levels stable.

Serve homemade Hummus with fresh raw veggies or spicy black bean dip with salsa and whole wheat crackers as an appetizer. Add your favorites to soups, stews and salads. Costillitas is a typical Cuban food made with citrus, garlic and herbs and cooked till tender and served with black bean and rice. Ropa vieja is one of the most well loved dishes of Cuba, made from beef and vegetables in a sauce and locals say that it tastes better a day after preparation when the flavors mingle together. So, the Cuban cuisine contributes to one of the reasons to visit Cuba along with its attractions of beaches and dance.
